1. Baked Oatmeal Blueberry Crumble
Serves 1
Ingredients
- 1/4 rolled oats (old-fashioned or quick oats)
- 2 T oat flour or gluten-free flour
- 1 scoop Designer Whey Vanilla Almond Protein Powder (to make Dairy-Free, use Essential 10 Vanilla Dream Plant-Based Protein Powder instead)
- pinch of salt
- 1/4 cup + 1 T unsweetened almond milk
- 1/4 tsp. baking powder
- 1/4 teaspoon cinnamon
- 1 T maple syrup (optional)
- 1/8 cup fresh or frozen blueberries
Directions
- Preheat oven to 375 degrees Fahrenheit.
- Mix all ingredients except blueberries in a medium bowl until combined.
- Dough should be sticky and wet but formed.
- Gently fold in blueberries.
- Press into two small ramekins or one medium ramekin and bake for 20 minutes or until a toothpick comes out clean.
