10. Overnight Oats with Toasted Almond Crunch

Ingredients
- Equal parts Old Fashioned Rolled Oats (not instant oats, they turn to mush) and milk, yogurt or dairy alternative (Blue Diamond Vanilla Almond Milk offers a bit of added richness).
- Fresh or frozen fruit of your choosing. I like to use frozen mango, blueberries, or a combination of the two. Frozen fruit, as it thaws the juices infuse the oats for a deep fruit flavor. Blue Diamond Almonds; toasted*
Directions
- Combine Oats, dairy/dairy alternative, and fruit in a mason jar or sealed container. Stir or shake to mix well.
- Place in refrigerator for oats to absorb the liquid. For best results, let set for at least 8 hours.
- Add almonds in the morning, so they are firm and add a nice, firm crunch.
Hint: Overnight oats can last for a couple days in the fridge, so a batch at the beginning of the week!
To toast Almonds: Place whole Blue Diamond Almonds in non-stick pan over medium heat, stirring constantly to avoid burning. Remove from heat, when nuts begin to brown.
